I roll the words around my mouth. Barbera. Barbaresco. Nebbiolo. I taste each vowel sucking slowly on the Bs. We go on a truffle hunt in the Langhe - our stomaches, rather than our noses, leading the way.

Two days. Three meals. The requirements: tartufo on every course. I wave the white flag at dessert. I surrender. Tartar. Piedmontese style. Lemon. Olive Oil. Salt Pepper. And the most macho machine cut fassona beef. More truffles shaved on my plate than I have ever eaten in one setting. Baked eggs. Butter pasta. I ate more truffle in 2 days than I’ve eaten in my entire life combined. Oh Mio Dio. A guttural sound escapes from my throat. The sound is almost primal. It’s the first weekend in December and the vines are barren. Save for an odd forgotten clustering of dark dark dark dried grapes clinging to a branch. The Earth the color of potatoes.
