Shopping at Rialto market, the fish monger wraps them in paper and I carry them home in my basket and run them under cold water. Pat them dry. And roll them in flour and cornmeal. Tossing them into a skillet with peppery green olive oil. Removing them from the pan I lay them on paper towels. And squeeze lemon. Coarse salt and Cracked pepper. A glass on chilled white wine. Lunch time. Pranzo. Buon appetito!
