Cooking on the Road
One of the things I love about staying in apartments or houses when I travel is the opportunity to cook on the road. Sometimes they are impromptu meals thrown together with inventiveness other times well planned thought out endeavors. When packing to come on this trip Lori Lassen packed a kitchen suitcase with everything we need to cook on the road. She brought her zucchini spaghetti cutter so we could have zucchini with pesto and then when she learned I don’t like pesto very well, with a little inventiveness she discovered pistachio pesto and a fabulous new recipe was born. Amazing dish - zucchini with pistachio pesto topped with a poached egg. Our host left us peaches in the refrigerator for breakfast and I turned one of them into peach salsa to accompany our starter!!
